Do you ever experiment with new foods you have never heard of?
Though fall begins September 21st, we don’t start thinking of fall until Halloween is reminding us of pumpkins and gourds.
Yum! Pumpkin bread, pumpkin soup, pumpkin pie, right?
During my search for a new recipe, I discovered an unusual vegetable that enticed my curiosity- kohlrabi!
Kohlrabi is in the turnip cabbage family, though it actually doesn’t really taste like either. It grows above ground and its leafy greens are good to eat as well. It is a good source of potassium and dietary fiber for gut health. Since I personally am not able to eat bananas, it is a great discovery to find another food that is a good source of potassium!
In my search to find this healthy vegetable in the grocery store, I made this amazing discovery in Walmart! This retailer carries kohlrabi in varies forms in its different locations so check what your local store carries. I was able to purchase kohlrabi shredded like noodles and I cooked it like spaghetti. It was delicious, low calorie and so healthy!
Butternut squash is also a great root vegetable to experiment with in recipes. Many stores carry this vegetable in cube or noodle form making it very easy to prepare healthy recipes.
No matter where you live or what the weather might be, use this time of year and take advantage of fall produce and get creative with new foods and recipes. Treat yourself to a new trick in the kitchen and try something nutritious and delicious!
